Wild Kakadu Plum & Yuzu Kosho
4 years ago, we turned a big batch of wild Kakadu plums into a fermented mash - full of citrusy, tart, salty, aromatic flavours - a delight to enjoy, and extremely rare to work with.
Mixed with Australian grown fresh Yuzu, fresh green chillies from Queensland, and left them alone for 4 years to ferment into a tangy, lemony take on a staple traditional Japanese condiment.
Gives warmth, citrus and tang to ANY dish, dressing or marinade.
INGREDIENTS:
Ingredients: wild kakadu plum, yuzu, olsson sea salt, green chilli, wild lemon myrtle.
