ZWF X National Museum of Australia: Wild Native Raspberry & Bottlebrush Nectar Cocktail Shrub
Fruity, bright, and everything that you’d imagine - like a raspberry lollipop in a bottle!
Collaboration inspired by the Dwarf Bottlebrush (Callistemon subulatus) found along the Welcome Path of the Kennedy Garden at the National Museum of Australia, Canberra.
Pairing wild foraged Australian Native Raspberries, collected continually and added to an ongoing fermenting mix, and sweetened with local Bellingen honey, as well as Bottlebrush Nectar reduced into a syrup.
Simply pour 20ml over ice, add 200ml soda water & top with fresh mint to serve. Spike with gin if so inclined!
