Bunya Nut & Honey Miso Apple Tarte Tatin
We love a Tarte Tatin as they really are super simple but also so impressive and comforting. You can make ahead of time by up to an hour, but they are best served straight from the oven.
The Bunya Nut & Honey Miso in the caramel and with the apples works so well. Try pears as well for delicious results.
Ingredients
2 tbsp Ziggy’s Bunya Nut & Honey Miso paste
4 apples, peeled, cut into quarters
2/3 cup brown sugar
1/4 cup unsalted butter
1 x 30cm circle short crust pastry
vanilla bean ice-cream to serve

Method
Preheat an oven to 190C.
Place a 26cm skillet/fry pan over a medium/high heat and add the sugar and butter. Cook and stir until it begins to bubble and emulsify then stir in the Miso and add the apples.
Toss the apples in the miso caramel, over the heat then remove the pan from the heat and arrange the apples so they are spread out evenly and what would have been skin side, facing down.
Lay the pastry over the apples and tuck the edges down the side. Then place back on the heat for 1 minute and transfer the pan to the oven. Cook for 15-20 minutes until the pastry is crisp and you can see the caramel bubbling up the side.
Remove from the oven, press a plate up to the top of the pan and flip over quickly so the pastry is on the bottom and the apples on top. Spoon any caramel left in the pan over the tarte and serve with the ice cream.
